Crescent & star :
Roman goddess Diane the Huntress's symbol was the crescent :
it was the emblem of Byzance. In 330 Roman emperor
Constantinus chose a new divinity (the so called "blessed
virgin") whose emblem was (& still is) a star.
When the Ottomans conkerred
Constantinopolis in 1453 they saw the combination of both
& chose them as their own new emblem. Notice this is
only a VERY POSSIBLE explanation but not 100% sure.
